Ingredients
For the Basa Marinade:
- 500 gm Basa Fillets
- 1/2 cup Grape Juice fresh
- 2 tsp Lemon Juice
- 2 tsp Chili Paste green
- 1 tsp Thyme dried
- 1 tsp Lemongrass finely minced
- 2 tsp Oregano dried flakes
- 1 tsp Garlic Powder
- 1.5 tsp Salt or to taste
For the Grape Sauce:
- 1/2 cup Grape Juice
- 1 tsp Garlic minced
- 2 tsp Chili Sauce green
- 2 tbsp Tofu crumbled
- 5 tbsp Greek Yogurt strained (hung curd)
- 1.5 tsp Salt or to taste
- 2 tbsp Butter
For the Grape Salsa:
- 1/2 cup Grapes halved, seedless
- 1/4 cup Bell Peppers finely chopped, yellow
- 1 Tomato finely chopped
- 1.5 tsp Lemon Juice
- 1.5 tsp Salt or to taste
Instructions
Prepare the Basa Marinade
- Cut the basa fillets into 5-inch pieces. In a bowl, combine the basa, grape juice, lemon juice, green chili paste, thyme, lemongrass, oregano, garlic powder, and salt. Mix well and marinate for at least 30 minutes.
Make the Grape Sauce
- Heat 1 tablespoon of butter in a pan over medium heat. Add the minced garlic and sauté for 1 minute. Stir in the green chilies and cook for a few seconds. Pour in the grape juice and simmer for 3-4 minutes. Add the green chili sauce and salt to taste. Remove from heat and let cool.
Combine Sauce Ingredients
- In a separate bowl, gently blend the Greek yogurt and crumbled tofu until smooth. Stir this mixture into the cooled grape sauce.
Prepare the Grape Salsa
- Combine the halved grapes, chopped bell pepper, chopped tomato, lemon juice, and salt in a bowl. Mix gently and refrigerate until ready to serve.
Cook the Basa
- Heat 1 tablespoon of butter in a non-stick pan over medium heat. Carefully place the marinated basa fillets in the pan and shallow fry until cooked through and lightly browned on both sides (about 3-4 minutes per side).

- To serve, spoon the grape salsa onto a plate. Top with a cooked basa fillet and generously drizzle with the grape sauce. Serve immediately and enjoy!
