Ingredients
 

Vegetables

  • 1 Beetroot cooked and peeled, medium-sized
  • 1 Potato cooked and peeled, medium-sized
  • 1 Onion finely chopped, medium-sized
  • 1 Chili finely chopped (adjust to taste), green

Spices

  • 1/2 tsp Coriander ground, toasted for enhanced flavor
  • 1/4 tsp Cumin ground, toasted for enhanced flavor
  • 1/4 tsp Paprika smoked paprika adds a deeper flavor
  • 1.5 tsp Salt or to taste
  • 1/4 tsp Pepper black, freshly ground

Prepare the Vegetables and Beans

  • Boil the beetroot and potato until tender. Peel and mash them in a large bowl. Finely chop the onion and green chili.

Combine Ingredients

  • Add the cooked red kidney beans, chopped onion, green chili, coriander, cumin, paprika, salt, and pepper to the mashed beetroot and potato. Mix thoroughly to combine.

Shape and Coat the Croquettes

  • Divide the mixture into 8 equal portions. Shape each portion into a small patty or croquette. Place poppy seeds on a plate. Gently roll each croquette in the poppy seeds to coat evenly.

Cook the Croquettes

  • Heat canola oil in a non-stick skillet over medium heat. Carefully place the coated croquettes in the skillet, ensuring not to overcrowd. Cook for 2-3 minutes per side, or until golden brown and heated through.
