Make the Eggplant Mixture
- Peel and roughly chop the roasted eggplants. In a food processor, combine the eggplant pulp, onion, garlic, parsley, salt, pepper, and half of the breadcrumbs. Pulse until coarsely combined, but do not puree.
Chill and Shape
- Transfer the mixture to a bowl, cover, and refrigerate for at least 1 hour to allow the flavors to meld and firm up. Once chilled, shape the mixture into small logs or croquettes.
Bread and Fry
- Place the remaining breadcrumbs on a plate. Roll each eggplant croquette in the breadcrumbs, ensuring they're evenly coated. Heat the vegetable oil in a deep skillet or pot to 350°F (175°C). Carefully fry the croquettes in batches until golden brown and crispy, about 3-4 minutes per side.
Serve
- Remove the croquettes from the oil and drain on paper towels. Serve immediately with your favorite dipping sauce, such as yogurt dip or marinara sauce.
