Preheat & Bake Potatoes

  • Preheat your oven to 400°F (200°C). Wash and scrub 4 medium russet potatoes. Pierce each potato several times with a fork. Bake for 1 hour, or until easily pierced with a fork.

Prepare Potato Boats

  • Remove potatoes from oven and let cool slightly until easily handled. Cut each potato in half lengthwise. Using a spoon, scoop out the potato flesh, leaving about a 1/4-inch border. Roughly chop the scooped potato.

Mix & Fill

  • In a large bowl, combine the scooped potato flesh, melted butter, grated cheddar and parmesan cheeses, Italian seasoning, salt, and pepper. Stir in sour cream or Greek yogurt (optional) until well combined. Season to taste.
  • Spoon the mixture back into the potato skins, mounding slightly.

Second Bake & Serve

  • Return the stuffed potato halves to the oven and bake for 10-15 minutes, or until the cheese is melted, bubbly, and lightly browned. Let cool slightly before serving and enjoy!
