Ingredients
Farrey Dough
- 2 cup Whole Wheat Flour whole
- 1 tsp Salt or to taste
- 1 cup Water
- 2 tbsp Oil for the dough
Farrey Filling
- 1 ½ cup Corn Kernels sweet
- 3 tbsp Chickpeas chana dal, soaked, split
- 2-3 Chillies green
- 2 tbsp Ginger-Garlic Paste
- 11 leaves Curry Leaves or basil leaves
- ¼ tsp Pepper black
- 1 tsp Salt or to taste
Serving and Garnishes
- 1 tbsp Schezwan Chutney
- ½ cup Cheese grated
- 1 tbsp Mayonnaise
- 1 tbsp Butter
- Oil as needed, for deep frying
Instructions
- Prepare the Farrey Filling: In a food processor, combine the corn kernels, split chickpeas, green chilies, ginger-garlic paste, curry leaves, black pepper, and salt.
- Pulse until a coarse paste forms. Avoid over-processing; some texture is desirable. This mixture forms the flavorful heart of your farrey.
- Make the Farrey Dough: In a large bowl, combine the whole wheat flour and salt. Gradually add water while mixing to form a smooth, pliable dough. Knead for a few minutes until the dough is soft and slightly elastic. Add oil and continue to knead for another minute. This ensures a soft texture.
- Assemble the Farrey: Divide the dough into small portions. Roll each portion into a thin circle. Place a spoonful of the corn filling in the center of each circle. Fold the dough over to create half-moon shapes, pressing the edges firmly to seal.
- Steamed Farrey: Steam the farrey for about 15-20 minutes, or until they are cooked through. Steaming creates a light and healthy version of the dumplings.
- Fried Farrey: Heat oil in a deep pan. Carefully drop the farrey into the hot oil and fry until golden brown and crispy. Frying adds a delightful crunch.
- Cheesy Grilled Farrey: Lightly brush a griddle or pan with butter. Place the farrey on the pan and cook until lightly browned on both sides. Sprinkle with grated cheese and cover to melt. Grilling and adding cheese creates a kid-friendly favorite.
- Serve the farrey platter hot, garnished with Schezwan chutney and a dollop of mayonnaise. The combination of flavors and textures makes this a truly enjoyable meal.
