Ingredients
For the Tinkaras Dough
- 1 cup Whole Wheat Flour whole
- 2 tbsp Rice Flour
- 1/2 cup Honey
- 1/4 cup Tofu grated
- 1 tbsp Milk Powder or soy milk/any milk
- 1 tbsp Semolina also known as suji or rava
- 1/2 cup Water add more if needed to form a dough
For Frying
- 2 cup Oil for deep frying
For the Sugar Syrup
- 1/2 cup Sugar
- 1/2 cup Water
- 1/4 tsp Cardamom Powder elaichi
- 1 pinch Pepper black, optional
Instructions
Prepare the Cashews
- Heat clarified butter (ghee) in a pan. Fry the cashews until golden brown. Set aside.
Make the Tinkara Dough
- In a bowl, combine whole wheat flour, rice flour, honey, grated tofu, milk powder, semolina, and water. Mix well to form a firm dough. Let it rest for 10 minutes.
Prepare the Sugar Syrup
- In a heavy-bottomed pan, combine sugar and water. Boil over medium heat for 10 minutes, or until a one-string consistency is reached (like gulab jamun syrup). Stir in cardamom powder and black pepper (if using).
Shape and Fry the Tinkaras
- Heat oil in a pan over low heat. Roll the dough into small lemon-sized balls. Flatten each ball into a patty shape using your thumb.
Fry the Tinkaras
- Fry the patties in hot oil, turning carefully until both sides are golden brown. Remove and drain on paper towels.
Soak in Sugar Syrup
- Gently dip the fried Tinkaras into the sugar syrup until they absorb it well.
Garnish and Serve
- Garnish the Tinkaras with fried cashews and a drizzle of honey (optional). Serve warm or chilled.
