Instructions

Prepare the Cashews

  • Heat clarified butter (ghee) in a pan. Fry the cashews until golden brown. Set aside.

Make the Tinkara Dough

  • In a bowl, combine whole wheat flour, rice flour, honey, grated tofu, milk powder, semolina, and water. Mix well to form a firm dough. Let it rest for 10 minutes.

Prepare the Sugar Syrup

  • In a heavy-bottomed pan, combine sugar and water. Boil over medium heat for 10 minutes, or until a one-string consistency is reached (like gulab jamun syrup). Stir in cardamom powder and black pepper (if using).

Shape and Fry the Tinkaras

  • Heat oil in a pan over low heat. Roll the dough into small lemon-sized balls. Flatten each ball into a patty shape using your thumb.

Fry the Tinkaras

  • Fry the patties in hot oil, turning carefully until both sides are golden brown. Remove and drain on paper towels.

Soak in Sugar Syrup

  • Gently dip the fried Tinkaras into the sugar syrup until they absorb it well.

Garnish and Serve

  • Garnish the Tinkaras with fried cashews and a drizzle of honey (optional). Serve warm or chilled.

Recipe Notes

Expert Tips for Perfect Tinkaras

  • For extra crispy Tinkaras, ensure the oil is heated properly before frying.
  • Don't overcrowd the pan while frying; work in batches to maintain the oil temperature and ensure even cooking.
  • Adjust the amount of sugar in the syrup to your preference. If you prefer a less sweet syrup, reduce the sugar accordingly.
  • Feel free to experiment with other nuts or seeds for garnishing, such as pistachios or sesame seeds.
