Instructions

Prepare the Tofu

  • Cut the firm tofu into bite-sized cubes. Press the tofu between paper towels or a clean kitchen towel to remove excess moisture.
  • Toss the tofu cubes in the cornflour, ensuring they are evenly coated.
  • Heat vegetable oil in a large skillet or wok over medium-high heat. Carefully add the coated tofu and fry until golden brown and crispy on all sides. Remove the tofu from the skillet and set aside.

Make the Sauce

  • In the same skillet, melt the butter over medium heat. Add the minced garlic and finely chopped ginger and sauté for about 30 seconds until fragrant.
  • Add the red chilies, chili garlic sauce, soy sauce, white vinegar, and tomato ketchup (or paste). Stir well to combine.
  • Season with salt and black pepper to taste. Simmer the sauce for 2-3 minutes, allowing the flavors to meld.
  • Stir in the chopped mint and coriander leaves.

Combine and Serve

  • Add the fried tofu cubes to the sauce and gently toss to coat evenly. Sprinkle with chili flakes and sesame seeds.
  • Garnish with extra coriander leaves and serve hot. Enjoy with your favorite chutney or dipping sauce.

Recipe Notes

Expert Tips for the Best Tofu Mancha

  • For extra crispy tofu, ensure it's completely dry before coating and frying. Patting it down with paper towels helps achieve this.
  • Don't overcrowd the pan when frying the tofu. Work in batches to ensure even browning and crispiness.
  • Adjust the amount of chili garlic sauce and chili flakes to control the level of spiciness according to your preference.
  • Experiment with different chutneys or dipping sauces to complement the flavors of the Tofu Mancha. A tamarind chutney or a spicy mint-coriander chutney would be excellent choices.
