Ingredients
For the Potatoes
- 2 Potatoes peeled and cut into 1-inch cubes
- 2 tbsp Mustard Oil
- 1/2 tsp Salt to taste
For the Spinach
- 1/4 cup Spinach fresh, roughly chopped
- 1 tbsp Mustard Oil (or other cooking oil)
For the Chaat
- 1/2 tsp Chili Powder adjust to taste, red
- 1 tsp Chaat Masala
- 1 tbsp Tamarind Chutney or to taste
- 1/4 cup Yogurt also known as curd, plain
- 2 tbsp Boondi dried, salted
- 1 tbsp Coriander chopped, for garnish (optional)
Instructions
Prepare the Spinach
- Wilt the spinach in 1 tablespoon of mustard oil over medium heat until tender. Set aside.
Roast the Potatoes
- In a separate pan, heat 1 tablespoon of mustard oil. Add the potato cubes and roast until golden brown and crispy, stirring occasionally. Season with salt and cook for a few more minutes until cooked through.
Assemble the Chaat
- In a serving bowl, combine the roasted potatoes and wilted spinach.
Add the Flavor
- Top with yogurt, tamarind chutney, boondi, chaat masala, and red chili powder. Mix gently to combine.
