Ingredients
For the Amchur Paste:
- 1/2 cup Mango Powder amchur, ensure the mango powder is finely ground for a smooth paste. add water gradually to achieve a smooth, dried, pourable consistency.
- 1/2 cup Water
For the Chutney:
- 1/2 cup Jaggery use good quality jaggery for the best flavor. you can substitute with brown sugar if needed.
- 1-2 tsp Salt adjust to your taste preference.
- 2 tsp Melon Seeds also known as makhana. lightly toast for enhanced flavor (optional).
- 2 tbsp Raisins
- 1/2 tsp Fennel Seeds
- 1-2 tsp Pepper freshly ground black pepper is recommended for optimal flavor. adjust to taste., black
- 1 tbsp Ghee optional, for sautéing spices and enhancing flavor.
Instructions
Prepare the Amchur Paste
- Combine the dried mango powder and warm water in a bowl. Mix thoroughly until a smooth paste forms. Set aside for 15-20 minutes to allow the flavors to meld.
Cook the Chutney
- Heat oil or ghee in a pan over medium heat. Add the jaggery and stir until it melts completely.
- Add the amchur paste, salt, raisins, fennel seeds, and black pepper to the pan. Mix well and bring the mixture to a gentle boil, stirring continuously to prevent sticking.
- Simmer the chutney until it thickens to your desired consistency. This may take 10-15 minutes. Stir frequently to ensure even cooking and prevent burning.
- Stir in the melon seeds. Remove from heat.
