Ingredients
- 2 cup Whole Wheat Flour whole
- 1.5 tsp Salt or as per taste
- 1 cup Milk
- Water as required
- 4 Potato boiled, sweet
- 1.5 tsp Salt or as per taste
- 2 tsp Chilli finely chopped, green
- 1 tbsp Coriander dhania, finely chopped
- 1 tsp Chillies pwoder, red
- 1 tbsp Onion finely chopped
- 1 tbsp Lemon Juice
- 2 tsp Mango Powder dry
- 1 tsp Cumin Seed jeera
- 1 tbsp Oil
Instructions
Prepare the Dough
- Combine whole wheat flour, milk, salt, and ghee or oil in a large bowl. Gradually add water while kneading until a soft, pliable dough forms. Cover and let it rest for at least 30 minutes.
Prepare the Sweet Potato Filling
- Heat oil in a pan. Add cumin seeds and let them splutter. Add finely chopped onions and green chilies, and sauté until softened.
- Add the mashed sweet potatoes to the pan. Mix well and cook for a couple of minutes.
- Stir in red chili powder, amchur (dry mango powder), coriander, lemon juice, and salt to taste. Cook until the mixture is slightly dry and slightly thickened. Let it cool completely.
Assemble and Cook the Parathas
- Divide the dough into small, equal-sized balls. Roll each ball into a thin circle using a rolling pin.
- Place a spoonful of the sweet potato mixture in the center of each circle.
- Fold the dough over the filling to create a half-moon shape, and gently seal the edges.
- Roll out the filled dough again into a thin, round paratha.
- Heat a flat griddle or tawa over medium heat. Cook the paratha on both sides until golden brown and slightly crispy, applying a little oil/ghee if needed.
Serve
- Serve hot with your favorite chutney, yogurt, or pickle.
