Ingredients
 

For the Batter

  • 3 cup Idli Batter fermented; ensure batter is slightly thick for best results

Spices and Aromatics

  • 1 Onion finely chopped
  • 2 Chili finely chopped; adjust to your spice preference, green
  • 1/2 tsp Ginger grated
  • 2 tbsp Coconut freshly grated
  • 10 Curry Leaves finely chopped
  • 2 tbsp Coriander finely chopped; cilantro

Other Ingredients

  • 2 tbsp Oil vegetable or coconut oil; for greasing the pan
  • Salt to taste

Prepare the Batter

  • Combine the idli batter with chopped onions, green chilies, grated ginger, coconut, curry leaves, coriander, and salt in a mixing bowl. Mix thoroughly until all ingredients are well incorporated.

Cook the Paniyaram

  • Heat a paniyaram pan over medium heat. Lightly grease each mold with 2-3 drops of oil.
  • Pour the spiced batter into each mold, filling them about ¾ full. Cook for 2-3 minutes, or until the edges turn golden brown.
  • Carefully flip the paniyaram and cook for another 2 minutes, or until golden brown on both sides. Add more oil as needed to prevent sticking.
  • Once cooked, remove the paniyaram from the pan and transfer them to a serving plate. Serve hot with chutney or sambar.
