  • In a large bowl, sift together the whole wheat flour, jowar flour, pearl millet flour, finger millet flour, rice flour, salt, cardamom powder, and ground ginger. Sifting aerates the dry ingredients, resulting in lighter paniyaram.
  • Dissolve the jaggery in ½ cup of water. Strain the mixture to remove any impurities.
  • In a blender, combine the banana and the strained jaggery water. Blend until smooth.
  • Pour the banana-jaggery mixture and honey into the bowl of dry ingredients.
  • Mix well to combine. Gradually add the remaining ½ cup of water, mixing until a smooth batter forms. Add a little more water if needed to achieve the desired consistency. The batter should be thick but pourable.
  • Finely chop the cashews or almonds and add them to the batter. Stir to distribute evenly.
  • Add the finely chopped apple to the batter and gently fold it in.

  • Heat a paniyaram pan over medium heat. Add gingelly oil to each cavity, filling about ¼ of the way. This prevents sticking and adds flavor.
  • Once the oil is hot, carefully pour a small ladleful of batter into each cavity.
  • Cover the pan and cook for about 3 minutes. Covering the pan traps steam and helps the paniyaram cook evenly.
  • Remove the lid, flip each paniyaram, and cook for another 3-4 minutes, or until golden brown and cooked through.
