Ingredients
Dalia & Water
- 1 cup Wheat Dalia whole
- 4 cup Water adjust as needed depending on the dalia
Tomato Base
- 3 Tomatoes medium
- 2 cup Tomato Puree Or Water can use reserved tomato cooking water
- 1/2 tbsp Garlic minced
- 1 1/2 Chiles chopped or slit, green
Spices & Flavorings
- 1/2 tsp Chili Powder red
- 1 1/2 tsp Salt or to taste
- 1 tsp Pizza Seasoning
- 3/4 tsp Chili Flakes
- 1 tbsp Tomato Sauce
Toppings & Oil
- 1/2 cup Corn Kernels sweet
- 1/4 cup Onion thinly sliced, red
- 1/4 cup Tomato thinly sliced
- 1/4 cup Bell Peppers capsicum, thinly sliced
- 1/4 cup Mozzarella Cheese shredded
- 3 tbsp Olive Oil
Instructions
- Boil the tomatoes until the skins begin to split. This makes them easier to peel.
- Remove the tomatoes from the boiling water and let them cool. Peel the skins off and blend into a smooth puree.
- Heat 1 tablespoon of olive oil in a deep pan or pot. Add the dalia and roast until fragrant and lightly golden. This enhances the nutty flavor.
- Transfer the roasted dalia to a bowl and set aside.
- Add the remaining olive oil to the same pan. Sauté the minced garlic until fragrant.
- Add the green chiles and tomato puree to the pan. Bring to a simmer.
- Stir in the sweet corn, red chili powder, and salt. Add the water or reserved tomato water. Bring the mixture to a boil.
- Reduce the heat to low and add the roasted dalia. Stir well to combine.
- Cover the pan and let the dalia simmer until about half cooked.
- Add the tomato sauce, chili flakes, and pizza seasoning. Stir and adjust salt and spices as needed.
- Cover and continue to cook until the dalia is about three-quarters done and most of the liquid is absorbed.
- Turn off the heat. Arrange the sliced onions, tomatoes, and bell peppers over the dalia. Top with shredded mozzarella cheese.
- For dum cooking, heat a griddle or tawa over low heat. Place the pan with the dalia on the hot griddle. Cover the pan with a lid and place a weight on top to seal in the steam. This will melt the cheese and gently cook the vegetables.
- Cook for 10-15 minutes. Remove from the griddle, sprinkle with extra pizza seasoning if desired, and serve immediately.
