Ingredients
- 1/2 kg Carissa Carandas
- 100 gm Chilli green
- 1 tbsp Salt
- 1/1/2 tsp Turmeric Powder
- 1/2 tsp Chili Powder red
- 1 tbsp Fennel Seeds roasted
- 1 tsp Fenugreek Leaves
- 1 tsp Mustard Seeds
- 1/2 tsp Sugar
- 2 tbsp Mustard Oil
- 1 tsp Coriander
Instructions
Preparation
- Wash the carissa carandas and green chillies thoroughly. Remove the seeds from the carissa carandas using a muslin cloth and set aside.
Spice Tempering
- Cut the green chillies into halves. Heat mustard oil in a pan. Add mustard seeds and roasted fennel seeds; sauté until fragrant.
Cooking the Pickle
- Add turmeric powder, coriander powder, red chilli powder, and salt. Stir well. Add the prepared carissa carandas and green chillies. Cover and cook for 5 minutes on medium heat.
Finishing Touches
- Add fenugreek leaves and sugar. Cook for another 2 minutes. Stir continuously to prevent burning. Remove from heat.
Cooling and Storage
- Allow the pickle to cool completely. Transfer to an airtight container and store in a cool, dry place. The flavor will deepen over time.
