  • Wash the carissa carandas and green chillies thoroughly. Remove the seeds from the carissa carandas using a muslin cloth and set aside.

  • Cut the green chillies into halves. Heat mustard oil in a pan. Add mustard seeds and roasted fennel seeds; sauté until fragrant.

Cooking the Pickle

  • Add turmeric powder, coriander powder, red chilli powder, and salt. Stir well. Add the prepared carissa carandas and green chillies. Cover and cook for 5 minutes on medium heat.

Finishing Touches

  • Add fenugreek leaves and sugar. Cook for another 2 minutes. Stir continuously to prevent burning. Remove from heat.

Cooling and Storage

  • Allow the pickle to cool completely. Transfer to an airtight container and store in a cool, dry place. The flavor will deepen over time.
