Ingredients
Potatoes
- 500 gm Baby Potatoes boiled until tender
Spices & Seasoning
- 1.5 tsp Salt adjust to taste
- 2 tsp Mustard Powder
- 1 tsp Chili Powder adjust to your spice preference, red
- 0.5 tsp Turmeric Powder haldi
- 2 Chilies finely chopped, green
Oil
- 3 tbsp Mustard Oil
Instructions
Prepare the Potatoes
- Peel and cut the boiled baby potatoes into bite-sized pieces. Roughly mash about 1/3 of the potatoes to create a thicker consistency for the pickle.
Make the Spice Mixture
- In a bowl, combine the cooled mustard oil, red chili powder, turmeric powder, mustard powder, and salt. Mix thoroughly to ensure all spices are evenly distributed.
Combine and Marinate
- Add the cut potatoes to the spice mixture, stirring gently to coat each piece completely. Incorporate the mashed potatoes and finely chopped green chilies. Mix well.
Sun-Dry (Optional)
- For a more intense flavor, place the pickle in direct sunlight for 2-3 days, stirring occasionally. This helps to develop a pleasant sourness. (Alternatively, store in an airtight container in a cool, dry place for at least 24 hours to allow the flavors to meld.)
Serve and Enjoy
- Serve your Instant Potato Pickle with parathas, roti, curd (yogurt), or any dish you prefer.
Recipe Notes
Expert Tips for the Best Instant Potato Pickle:
- Adjust the Spice Level: Feel free to adjust the amount of red chili powder to your liking. For a milder pickle, use less; for a spicier kick, add more.
- Use Fresh Spices: Using freshly ground spices will enhance the overall flavor profile of your pickle. If possible, grind your own spices for the best results.
- Don't Overmash: While some mashed potatoes are needed for texture, avoid over-mashing, as it could result in a mushy pickle. Aim for a balance of whole and mashed pieces.
- Storage: Store leftover pickle in an airtight container in the refrigerator. It will keep well for several weeks.
