Ingredients
For the Pineapple:
- 1 Pineapple ring
For the Beetroot Halwa:
- 1 cup Beetroot Juice
- 0.5 cup Semolina suji
- 0.5 cup Mawa khoya
- 2 tbsp Ghee
- 2 tbsp Sugar
- 1 tsp Cardamom Powder elaichi
- 1 tbsp Nuts chopped
- 1 tbsp Heavy Cream
Instructions
- Peel the pineapple and cut it into a ring shape. Remove the hard inner core.
- In a frying pan, heat the ghee over medium heat. Add the semolina and stir constantly until it turns light brown and fragrant. This toasting process enhances the nutty flavor of the semolina.
- Add the mawa, sugar, cardamom powder, and chopped nuts to the pan. Mix well and continue to stir-fry for a minute until fragrant.
- Pour in the beetroot juice and stir until the mixture thickens and comes together. This creates the base of your beetroot halwa.
- Stir in the heavy cream, then remove the halwa from the heat and set it aside.
- In the same pan, melt the butter over medium heat. Add ¼ teaspoon of sugar. Sauté the pineapple ring on both sides until lightly caramelized and golden brown. This adds a touch of sweetness and enhances the pineapple's natural flavors.
- On a serving plate, create a bed of the beetroot halwa. Place the sautéed pineapple ring on top. Fill the center of the pineapple ring with the remaining beetroot halwa.
- Garnish with a thin slice of fresh beetroot for an elegant touch. Serve warm or chilled.
Recipe Notes
Good To Know
- For an extra layer of texture, fold in finely chopped roasted nuts such as pistachios or cashews just before setting the dessert; they complement both the earthy beetroot and the tangy pineapple.
- If you prefer a dairy-free version, substitute mawa with cashew or almond paste and use coconut cream instead of regular cream for a subtle tropical note.
- To enhance the natural color and flavor, roast the semolina in ghee until golden before adding beetroot juice and pineapple—this step helps prevent sogginess and deepens the dessert’s aroma.
- Chill the dessert for at least two hours before serving; this not only improves the set and texture but also intensifies the fruity flavors, making each bite more refreshing.
Expert Tips
- Balance the sweetness: Beetroot can be earthy, so adjust the sugar level to your preference, keeping in mind the pineapple's sweetness.
- Presentation matters: Garnish with a dollop of cream or yogurt, a sprinkle of chopped nuts, and a few edible flowers for an elegant finish.
- Experiment with spices: A pinch of cardamom or cinnamon can complement the beetroot and pineapple flavors beautifully.
Storage Instructions
- This dessert can be served immediately or stored in the refrigerator.
