Ingredients
FOR CAKE
- 1 cup All-Purpose Flour also known as maida
- 0.75 cup Whole Wheat Flour + 3 tbsp, whole
- 2 tsp Baking Powder
- 1 cup Sugar also known as castor sugar, granulated
- 2 tbsp Buttermilk homemade buttermilk preferred
- 1 tsp Vanilla Extract
- 4 Large Eggs approximately 60g each
- 1 cup Vegetable Oil neutral oil such as canola or sunflower
- 0.5 cup Walnuts roughly chopped; reserve 2-3 tablespoons for topping
Instructions
Preheat Oven & Prepare Pan
- Preheat oven to 350°F (180°C). Grease and flour a 10x5 inch loaf pan (or 9-inch round pan). Line the bottom with parchment paper for easy removal.
Combine Dry Ingredients
- In a medium bowl, whisk together all-purpose flour, whole wheat flour, and baking powder. Add chopped walnuts and set aside.
Whisk Wet Ingredients
- In a large bowl, whisk together granulated sugar and buttermilk for 30 seconds. Add vanilla extract. Gently whisk in eggs one at a time.
Make the Caramel
- In a small saucepan over medium-low heat, combine granulated sugar and water. Cook, without stirring, until the sugar dissolves and turns a deep amber color. Remove from heat immediately.
Combine Wet and Dry Ingredients
- Whisk the oil into the wet ingredients until just combined. Gently fold in the dry ingredients until just incorporated. Do not overmix.
Add Caramel to Batter
- Carefully pour the hot caramel into the batter. Gently whisk until most of the caramel is incorporated, leaving some streaks for visual appeal. Do not overmix.
