Instructions

Preheat Oven & Prepare Pan

  • Preheat oven to 350°F (180°C). Grease and flour a 10x5 inch loaf pan (or 9-inch round pan). Line the bottom with parchment paper for easy removal.

Combine Dry Ingredients

  • In a medium bowl, whisk together all-purpose flour, whole wheat flour, and baking powder. Add chopped walnuts and set aside.

Whisk Wet Ingredients

  • In a large bowl, whisk together granulated sugar and buttermilk for 30 seconds. Add vanilla extract. Gently whisk in eggs one at a time.

Make the Caramel

  • In a small saucepan over medium-low heat, combine granulated sugar and water. Cook, without stirring, until the sugar dissolves and turns a deep amber color. Remove from heat immediately.

Combine Wet and Dry Ingredients

  • Whisk the oil into the wet ingredients until just combined. Gently fold in the dry ingredients until just incorporated. Do not overmix.

Add Caramel to Batter

  • Carefully pour the hot caramel into the batter. Gently whisk until most of the caramel is incorporated, leaving some streaks for visual appeal. Do not overmix.

Bake the Cake

  • Pour the batter into the prepared pan. Bake for 40-45 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cake cool completely in the pan before serving.

Recipe Notes

Expert Tips for the Perfect Caramel Cake

  • Use a heavy-bottomed saucepan for making the caramel to prevent burning.
  • Don't stir the caramel while it's cooking; swirling the pan occasionally is acceptable.
  • Be careful when adding the hot caramel to the batter; it will splatter. Work quickly but gently.
  • If your caramel hardens too quickly, gently reheat it over very low heat before adding it to the batter. Use caution.
