Ingredients
For the Chole (Chickpea Curry)
- 1 cup Chickpeas chole, soaked overnight, dried
- 3 tbsp Oil vegetable or canola oil
- 1 medium Onion finely chopped
- 1 tsp Chili Powder adjust to your spice preference
- 1 tsp Coriander Powder
- 1 tsp Chole Masala
- 1 medium Tomato finely chopped
- 2-3 Chili slit lengthwise, adjust to taste, green
- 1 inch Ginger finely minced
- 1.5 tsp Salt or to taste
- 1/2 tsp Chaat Masala
- 1 tbsp Fenugreek Leaves kasuri methi, dried
For the Kulcha
- 2.2 cup Whole Wheat Flour whole
- 2/3 cup Water add more as needed
- 1 tbsp Ghee or vegetable oil
- 1/2 tsp Salt
Instructions
Preparing the Chole
- Soak the chickpeas overnight.
- Cook the chickpeas until tender. You can do this in a pressure cooker or on the stovetop.
- Heat oil in a pan. Add the chopped onions and sauté until golden brown.
- Add chili powder, coriander powder, and chole masala. Sauté for 3 minutes on low heat.
- Add the chopped tomatoes, green chilies, ginger, and salt. Cook for 2-3 minutes.
- Add the cooked chickpeas and simmer for 5 minutes.
- Stir in chaat masala and kasuri methi. Set aside.
Making the Kulcha Dough
- In a large bowl, combine whole wheat flour, salt, and ghee.
- Gradually add water, mixing until a dough forms.
- Knead the dough until smooth and elastic. Add more water if needed.
- Cover the dough and let it rest for 20-30 minutes.
Assembling and Cooking the Stuffed Kulcha
- Divide the dough into two equal portions. Roll each portion into a circle (4-5 inches in diameter).
- Place one rolled dough circle in a small plate to shape it to the plate.
- Spoon the prepared chole mixture onto the center of the shaped dough.
- Garnish with a few green chili slices.
- Place the second rolled dough circle on top of the chole, sealing the edges firmly.
- Brush the outer surface of the kulcha with water.
- Heat a flat griddle or tawa over medium heat.
- Cook the kulcha on the tawa, flipping it as needed, until golden brown on both sides.
- Alternatively, you can bake them in a preheated oven at 375°F (190°C) for 15-20 minutes.
- Once cooked, use a knife to make a circular cut on top of the kulcha to reveal the filling.
