Ingredients
- 5 Potato medium
- 1 cup Stuffing or paneer for crumbled paneer
- 1 Onion finely chopped
- 2 tsp Chilli finely chopped, green
- 1 pinch Turmeric Powder haldi
- Pepper as required
- 1/4 tsp Chili Powder red
- 1.5 tsp Salt or as per taste
- 1 cup Potato mashed, or covering other ingredients for the covering layer
- 2 tbsp Milk
- 1 cube Amul Cheese
- 1.5 tsp Salt or as per taste
- Carrot olives, spring onions & french beans (for making face)
Instructions
Prepare the Spiced Paneer Filling
- Heat vegetable oil in a pan. Add the finely chopped onion and sauté for a few minutes until softened.
- Add the finely chopped green chilies, turmeric powder, red chili powder, black pepper, and salt. Mix well.
- Stir in the crumbled paneer and cook for another minute, ensuring everything is well combined. Remove from heat and set aside.
Prepare the Potatoes
- Wash the potatoes thoroughly and boil until tender but not mushy. Allow to cool.
- Once cool, carefully cut each potato in half lengthwise.
- Using a spoon, scoop out the potato flesh, leaving a thin layer intact. Reserve the scooped-out potato.
Assemble the Stuffed Potatoes
- Fill each potato half with the spiced paneer mixture.
- In a bowl, combine the reserved mashed potato, milk, grated cheese, salt, and pepper. Mix until smooth and creamy.
- Spread this creamy potato mixture over the paneer filling in each potato half.
Create the Faces
- Cut small circles from the carrot for eyes, thin slices from the olives for pupils, a small piece of green bean for the nose, and thin strips from the spring onion for the smile.
- Arrange the carrot circles for the eyes, add the olive slices, and assemble the nose and smile using the remaining vegetables.
Bake and Serve
- Bake the stuffed potatoes in a preheated oven at 350°F (180°C) for 10-15 minutes, or until the potato skins are golden brown and crispy. Serve immediately and enjoy!
