Ingredients
Spices & Aromatics
- 1 tsp Cumin Seeds jeera
- 1 tsp Fenugreek Seeds methi dana
- 4 tbsp Fenugreek Leaves kasuri methi, dried
- 1 tbsp Coriander dhania, chopped
- 2 tbsp Chili finely chopped, green
- 2 tbsp Chili lal mirch, broken into halves, red, whole
Vegetables & Other Ingredients
- 4 Potatoes large, peeled and thinly sliced
- 1 tbsp Lemon Juice
- 1 tbsp Ghee desi ghee recommended for authentic flavor
- Salt or sendha namak (rock salt), to taste
Instructions
Prepare the Potatoes
- Cut the potatoes into thin, even slices. Set aside.
Sauté the Spices
- Heat the ghee or oil in a pan over medium heat. Add the cumin seeds and fenugreek seeds. Sauté until the seeds begin to splutter and become fragrant (about 30 seconds).
Add Aromatics and Potatoes
- Add the green chilies and broken red chilies. Sauté for another 30 seconds until fragrant. Add the sliced potatoes and salt. Stir well to coat the potatoes with the spices and oil.
Simmer and Finish
- Cover the pan and cook the potatoes for 5-7 minutes, stirring occasionally, until they are tender but still hold their shape. Stir in the dried fenugreek leaves (kasuri methi) and coriander leaves. Cook for another minute.
Serve
- Remove from heat and stir in the lemon juice. Serve hot with roti, naan, or rice.
