Ingredients
Dry Ingredients
- 2 cup All-Purpose Flour
- 1 cup Sugar powdered
- 1/4 tsp Baking Soda
- 1/2 tsp Baking Powder
- 3 tbsp Cocoa Powder unsweetened

- 1 cup Butter softened, unsalted
- 1/2 tsp Vanilla Extract
Instructions
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy. This incorporates air for a tender cookie.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and baking powder. This ensures even distribution of the leavening agents.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix, as this can lead to tough cookies.
- Divide the dough into three portions: two equal portions of 25% each and one larger portion of 50%.
- Add 1 tablespoon of cocoa powder to one of the smaller portions and 2 tablespoons to the other smaller portion. Mix each portion thoroughly until the cocoa is fully incorporated.
- Divide each of the cocoa dough portions into 5 equal pieces. Divide the plain dough in half, then divide one half into 5 equal pieces. Roll all the divided dough pieces into balls.
- Shape each of the lighter cocoa dough balls into small logs or sticks.
- Roll each of the darker cocoa dough balls into thin oval shapes.
- Place a lighter cocoa log onto each darker cocoa oval and wrap the oval around the log, pinching the edges to seal.
- Roll out each of the plain dough balls into thin oval shapes.
- Wrap each plain dough oval around a cocoa-wrapped log, pinching the edges to seal. Repeat this process for all 5 logs.
- Roll the remaining plain dough into a large, flat rectangle.
- Arrange the wrapped logs side-by-side on the plain dough rectangle.
- Carefully roll the dough rectangle around the logs, forming a large log. Wrap the log tightly in plastic wrap and chill in the refrigerator for at least 30 minutes. Chilling helps the dough firm up, preventing the cookies from spreading too much during baking.
- Preheat oven to 325°F (160°C). Remove the chilled dough from the refrigerator and slice it into ¼-inch thick rounds.
- Place the cookies on a baking sheet lined with parchment paper and bake for 18-20 minutes, or until the edges are lightly golden.
