Ingredients
For the Dough
- 1 cup All-Purpose Flour also known as maida
- 2 grams Yeast fresh yeast
- 1.5 tsp Salt or to taste
- 1 tsp Garlic finely chopped
- 1 tsp Fenugreek Leaves dried
- 1 tsp Chili Powder red
- 1/2 cup Water lukewarm
- 2 tbsp Water for activating yeast
- 2 tbsp Oil for greasing
For Filling
- 1 cup Spring Onions finely chopped
- 3 ounce Cheese grated (cheddar, mozzarella, or your preference)
Instructions
Prepare the Dough
- Activate yeast by dissolving 2 tablespoons of lukewarm water. Add salt, garlic, red chili powder, and fenugreek leaves. Mix until salt dissolves.
- Add flour gradually, kneading to form a soft, smooth dough using lukewarm water as needed. Cover and let rise for 40-60 minutes.
Shape and Cook the Buns
- Divide the dough into 6 equal portions. Shape each portion into a round bun and cover with a damp cloth.
- Preheat a pressure cooker by adding 350g of salt to the bottom and leaving it to heat on low for 10-15 minutes. This creates a dry heat similar to an oven.
- Grease a plate and arrange the buns on it. Carefully place the plate inside the preheated pressure cooker. Cover and cook on low heat for 25-30 minutes, basting with oil halfway through. Do not use the whistle.
- Remove from the cooker and let cool to room temperature.
Fill and Finish
- Make two deep cross-shaped cuts on each bun. Fill with grated cheese and chopped spring onions.
- Return buns to the preheated pressure cooker for 5-10 minutes, allowing the cheese to melt completely. Check frequently to ensure the cheese is melted, but buns are not burnt.
- Remove and serve warm.
