  • Pressure cook the potatoes and sprouts with a small amount of water for 3 whistles, or until tender. Allow to cool.
  • Once cooled, mash the potatoes and set aside. Drain the sprouts and set them aside as well.
  • Heat the cooking oil in a pan over medium heat. Add the mustard seeds and let them splutter.
  • Add the cumin seeds and sauté until they turn light brown. Then, add the chopped onion and ginger-garlic paste. Sauté until the onion becomes translucent.
  • Add the chopped tomatoes and cook until they soften into a pulp. This creates the base for the flavorful sauce.
  • Stir in the turmeric powder, red chili powder, ground coriander, ground cumin, and garam masala. Mix well and cook for 1-2 minutes over low heat, allowing the spices to bloom.
  • Add the mashed potatoes, boiled sprouts, and salt to the pan. Mix thoroughly, ensuring the vegetables are well combined with the spice mixture.
  • Continue cooking for another 2 minutes, or until the mixture is heated through and any excess moisture has evaporated.
  • Take two slices of bread and lightly spread low-fat butter on both sides of each slice.
  • Place a generous portion of the sprout and potato mixture onto one slice of bread and spread it evenly.
  • Top with the other slice of bread to form a sandwich. Gently press down.
  • Spread a little butter on the top of the sandwich. Grill the sandwich in a sandwich maker until golden brown and heated through.
  • If you don't have a sandwich maker, you can toast the sandwich in a non-stick pan or on a griddle with a little butter. Ensure the edges are sealed to prevent the filling from spilling out.
