Instructions

Prepare the Soybeans

  • Boil the soaked soybeans for 10 minutes until tender. Drain well and set aside.

Marinate the Soybeans

  • In a bowl, combine the drained soybeans with 1 tbsp ginger-garlic paste, 1 tbsp red chili powder, 3 tbsp corn flour, and 2 tbsp all-purpose flour. Mix thoroughly to coat the soybeans evenly.

Fry the Soybeans

  • Heat 2 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add the marinated soybeans and fry until golden brown and crispy, stirring occasionally. Remove the soybeans from the skillet and place them on a paper towel-lined plate to drain excess oil.

Prepare the Sauce

  • Heat 2 tbsp vegetable oil in the same skillet over medium heat. Add the chopped onion and saute until softened. Add the diced bell pepper and green chilies and saute for a few more minutes.

Combine and Simmer

  • Add the 1 tbsp ginger-garlic paste to the skillet, followed by the vinegar, green chili sauce, tomato ketchup, red chili sauce, soy sauce, salt, and sugar. Stir well to combine and cook for 2-3 minutes.

Finish and Serve

  • Add the fried soybeans to the sauce, stirring gently to coat them evenly. Stir in the chopped spring onions. Serve hot!

Recipe Notes

Expert Tips for the Best Spicy Soybeans

  • Soaking the soybeans overnight ensures they cook evenly and become tender. If you are short on time, you can also quick-soak them by covering them with boiling water and letting them sit for at least an hour.
  • Don't overcrowd the skillet when frying the soybeans; work in batches if necessary to ensure they crisp up nicely.
  • Adjust the amount of chili powder and chili sauces to your preferred level of spiciness. For a milder version, reduce the amount of chili.
  • For extra flavor, consider adding a pinch of garam masala or other spices to the sauce.
