Prepare the Gatta

  • Soak the poha in water for 5 minutes. Drain well and set aside.
  • In a bowl, combine gram flour, salt, red chili powder, cumin powder, chopped green chilies, and lemon juice. Mix well until a smooth, slightly sticky dough forms. Add a little water if necessary to achieve desired consistency.
  • Shape the dough into a thick cylindrical roll.
  • Wrap the roll tightly in aluminum foil, ensuring the ends are sealed.

Steam the Gatta

  • Bring a pot of water to a boil. Place the foil-wrapped gatta roll in a steamer basket or a heatproof plate above the boiling water. Cover and steam for 10-12 minutes, or until the gatta is cooked through and firm.

Cook and Serve

  • Heat ghee in a pan over medium heat. Add cumin seeds and let them splutter. Add finely chopped onions and saute until softened and lightly golden.
  • Remove the gatta from the foil and cut it into 1/2 inch thick rounds. Add the gatta to the pan with the onions. Stir gently to coat with ghee.
  • Cook for 2-3 minutes, allowing the gatta to slightly brown.
  • Stir in the cooked poha and cilantro. Cook for another minute to combine. Garnish with extra cilantro and a squeeze of lemon juice if desired. Serve hot with tea or as a standalone dish.
