Recipe Notes

Good To Know

  • For extra depth of flavor, try roasting the mushrooms and capsicum in the oven at 220°C (425°F) for 10-12 minutes before adding them to the sauce—this enhances their natural sweetness and imparts a subtle smoky taste.
  • If serving for breakfast or brunch, use the spicy mushroom sauce as a topping for thick slices of toasted bread or as a filling for savory crepes.
  • To make the dish vegan and creamier, replace the mashed potatoes with vegan or coconut-based mashed potatoes and use olive oil instead of ghee or butter in the sauce.
  • For a kid-friendly version, deseed the chilies or substitute with sweet paprika to reduce heat while retaining the vibrant color and flavor of the sauce.

Expert Tips

  • Don't overcrowd the pan when sautéing the mushrooms and capsicum. This will ensure they brown properly and develop a richer flavor.
  • Adjust the amount of chili according to your preference. Start with a small amount and add more gradually until you reach your desired level of spiciness.
  • Freshly chopped herbs like parsley or cilantro can be added as a garnish for a pop of color and freshness.

Storage Instructions

  • Store leftover spicy mushroom sauce in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop or in the microwave before serving.
