Instructions

  • In a pan, melt the butter over medium heat. Add the minced garlic and green chiles. Sauté until fragrant.
  • Add the finely diced onions and red bell pepper. Sauté until the onions are translucent and the peppers are slightly softened.
  • Season with salt. Simmer for 3-5 minutes, or until the flavors meld. Set aside to cool.
  • In a bowl, combine the peeled prawns with salt, turmeric powder, red chili powder, chili flakes, lemon zest, and lemon juice. Marinate for at least 30 minutes in the refrigerator. This allows the prawns to absorb the flavors.
  • In a hot frying pan, melt the butter. Add the marinated prawns and fry until they turn pink and opaque, cooking them through.
  • Ensure the prawns are cooked evenly on both sides.
  • Cook the spaghetti according to package directions in a large pot of salted boiling water. Cook until al dente, then drain and set aside.
  • In a pan, sauté the minced garlic in a little oil until fragrant. Add the cooked spaghetti and chopped basil. Toss to combine.
  • In a bowl, combine the flour and salt. Gradually add water, mixing until a dough forms. Knead until smooth and elastic.
  • Roll out the dough thinly and cut into desired shapes.
  • Fry the roti until golden brown and crispy. Set aside.
  • In a small glass or shooter, spoon a layer of the tomato-pepper sauce.
  • Twirl a portion of the garlic spaghetti and place it on top of the sauce.
  • Place the fried prawns on top of the spaghetti.
  • Serve immediately. If desired, serve with the optional roti on the side.

Recipe Notes

Good To Know

  • For a dramatic presentation, serve the prawn shooters in small glasses or shot glasses layered with twirled spaghetti, a generous spoonful of tomato pepper sauce, and a prawn perched on top, garnished with fresh cilantro or microgreens.
  • If you want extra depth in your sauce, roast the red bell peppers and tomatoes before blending them—this will add a smoky, sweet undertone that pairs excellently with the spicy prawns.
  • To infuse even more tang and complexity, add a splash of fresh lime juice and a pinch of Mexican oregano to the sauce just before serving.
  • Prepare the sauce and spaghetti ahead of time, but sauté the prawns just before serving to maintain their juicy texture and prevent them from becoming rubbery.

Expert Tips

  • Adjust the spice level of the sauce by adding more or fewer chili peppers according to your preference.
  • For a richer flavor, use high-quality extra virgin olive oil for sautéing the prawns.
  • If you don't have shot glasses, you can use small appetizer bowls or even Asian soup spoons for serving.

Storage Instructions

  • It's best to enjoy prawn shooters immediately after preparation for the best flavor and texture.
  • If you have leftovers, store the sauce and prawns separately in airtight containers in the refrigerator for up to 2 days. Reheat the prawns gently before serving.
