Instructions

Prepare the Squid

  • Wash and clean the squid thoroughly. Reserve the tentacles.
  • Pressure cook the squid bodies for 15-20 minutes with 0.25 tsp turmeric powder, 1 tsp red chili powder, and 1 tsp ginger-garlic paste.
  • Once cooked, remove and allow to cool slightly. Finely chop the tentacles and set aside.
  • Marinate the squid bodies with 0.25 tsp turmeric powder, 2 tsp red chili powder, and salt to taste. Let it rest for at least 1 hour.

Prepare the Filling

  • Heat 1 tbsp of vegetable oil in a pan. Add the chopped onions and sauté until light brown.
  • Add 1 tsp of ginger-garlic paste and sauté until fragrant.
  • Add 0.25 tsp turmeric powder and 1 tsp red chili powder, and sauté briefly.
  • Add the chopped tomatoes and sauté until softened and oil separates.
  • Stir in the chopped squid tentacles and crushed fennel seeds. Mix well.
  • Add the chopped coriander and cook for 2 minutes. Remove from heat.

Assemble and Cook

  • Fill each marinated squid body with the prepared filling using the back of a spoon, ensuring even distribution.
  • Seal the opening of each squid with a toothpick.
  • Heat remaining vegetable oil in a pan. Carefully place the stuffed squid in the pan and shallow fry for 10-15 minutes, turning occasionally, until golden brown and cooked through.
  • Serve hot, garnished with honey and sesame seeds.

Expert Tips for Perfect Stuffed Squid

  • For extra flavor, marinate the squid for longer – up to 2-3 hours.
  • Don't overcrowd the pan when frying the stuffed squid; this ensures even cooking.
  • Adjust the amount of chili powder to your preferred spice level.
  • If you don't have a pressure cooker, you can boil the squid until tender (approximately 15-20 minutes).
