Ingredients
Vegetables
- 2 Tomatoes cut into 8 wedges, medium-sized
- 1 Onion small, thinly sliced, white
- 2 tbsp Spring Onions chopped green parts only
- 1-2 Chillies adjust to taste, finely chopped, green
Protein & Eggs
- 4 Eggs
Aromatics & Seasoning
- 1 tsp Ginger-Garlic Paste finely chopped ginger and garlic can be substituted
- 1.5 tsp Salt or to taste
- 1 tsp Soy Sauce dark
- 1/2 tsp Rice Vinegar or other light vinegar
Fats & Oils
- 4 tbsp Cooking Oil vegetable or canola oil recommended
Instructions
Prepare the Tomatoes
- Heat 1 tbsp oil in a wok or large frying pan over medium-low heat. Add the tomatoes and sauté, covered, for 5 minutes until slightly softened. Remove and set aside.
Beat the Eggs
- In a bowl, whisk the eggs together with 1 tsp of salt.
Sauté Aromatics
- Heat the remaining 3 tbsp oil in the same wok over medium-high heat. Add the ginger-garlic paste and sauté for 30 seconds until fragrant.
Add Vegetables and Seasoning
- Add the sliced white onion and green chilies. Sauté until translucent, about 2-3 minutes.
- Stir in the dark soy sauce and rice vinegar.
Cook the Omelette
- Pour the beaten eggs into the wok and cook, stirring continuously, until set but still slightly moist.
Combine and Serve
- Gently stir in the cooked tomatoes and chopped spring onions. Cook for another minute, then remove from heat.
