Ingredients
 

Vegetables

  • 2 Tomatoes cut into 8 wedges, medium-sized
  • 1 Onion small, thinly sliced, white
  • 2 tbsp Spring Onions chopped green parts only
  • 1-2 Chillies adjust to taste, finely chopped, green

  • 4 tbsp Cooking Oil vegetable or canola oil recommended

Instructions
 

Prepare the Tomatoes

  • Heat 1 tbsp oil in a wok or large frying pan over medium-low heat. Add the tomatoes and sauté, covered, for 5 minutes until slightly softened. Remove and set aside.

Beat the Eggs

  • In a bowl, whisk the eggs together with 1 tsp of salt.

Sauté Aromatics

  • Heat the remaining 3 tbsp oil in the same wok over medium-high heat. Add the ginger-garlic paste and sauté for 30 seconds until fragrant.

Add Vegetables and Seasoning

  • Add the sliced white onion and green chilies. Sauté until translucent, about 2-3 minutes.
  • Stir in the dark soy sauce and rice vinegar.

Cook the Omelette

  • Pour the beaten eggs into the wok and cook, stirring continuously, until set but still slightly moist.

Combine and Serve

  • Gently stir in the cooked tomatoes and chopped spring onions. Cook for another minute, then remove from heat.
  • Serve hot, garnished with extra spring onions if desired. Enjoy with ketchup or chili sauce!
