Instructions

Prepare the Aromatics

  • Finely chop one onion, and roughly chop the other. Mince the garlic and ginger. Combine the roughly chopped onion, ginger, garlic, and green chilies in a food processor or blender and create a smooth paste.

Sauté and Simmer

  • Heat vegetable oil in a pan or wok over medium heat. Add the finely chopped onion and sauté until golden brown. Add the aromatics paste and sauté for another 2-3 minutes until fragrant.

Incorporate Crab and Spices

  • Stir in soy sauce and chili flakes. Add the crab meat and sauté for approximately 5 minutes, stirring occasionally. In a separate bowl, mix tomato sauce (if using), chili flakes and water. Add this mixture to the crab. Season with salt to taste.

Add Eggs and Finish

  • Let the curry simmer for a few minutes, partially covered. In a small bowl, whisk the eggs with a pinch of salt. Gently pour the eggs into the simmering curry and cover the pan for about 1 minute. Then, gently scramble the eggs into the curry. Stir in the chopped green chilies and lemon juice.

Serve

  • Remove from heat and serve hot with steamed rice or naan bread.

Recipe Notes

Expert Tips for the Best Crab Curry

  • For a richer flavor, use coconut milk instead of water, adding 1/2 cup of coconut milk to the curry along with water.
  • Don't overcook the crab meat, as it can become tough. Cook until just heated through.
  • If you prefer a spicier curry, add more green chilies or a pinch of cayenne pepper.
  • Garnish with fresh cilantro or chopped green onions before serving for added visual appeal and freshness.
