Ingredients
For the Paneer Filling
- 1 tbsp Vegetable Oil
- 1/4 cup Onion thinly sliced
- 1/4 tsp Carom Seeds carom seeds
- 1/4 tsp Cumin
- 1/2 cup Cottage Cheese crumbled, indian cottage cheese
- 1/2 tsp Salt to taste
For the Cocoa Batter
- 1 cup Cocoa Powder dark and natural, unsweetened
- 3/4 cup Gram Flour besan; also known as bengal gram flour
- 1 tsp Baking Soda
- 4 tsp Chili Powder red
- 1 tbsp Jaggery grated
- 3 tbsp Tamarind Paste
- 1 tsp Salt to taste
- Water Water as needed for batter consistency
For Stuffing and Frying
- 6 Chili Pepper green, long and stout
- Vegetable Oil Vegetable Oil for deep frying
For Garnishing
- Chaat Masala
- Onion finely chopped
Instructions
Prepare the Paneer Filling
- Heat oil in a pan. Add thinly sliced onions, ajwain, and cumin seeds. Sauté for 1 minute.
- Add crumbled paneer and salt. Sauté until the mixture is tender.
- Remove from heat and set aside.
Prepare the Cocoa Batter
- In a bowl, combine cocoa powder, gram flour, baking soda, red chili powder, grated jaggery, tamarind paste, and salt.
- Gradually add water, mixing until a smooth batter forms, without lumps.
Stuff and Fry the Chilies
- Slit green chilies lengthwise and remove seeds.
- Carefully stuff the chilies with the paneer mixture.
- Heat oil in a deep pan over medium heat.
- Dip stuffed chilies in the batter, ensuring they are fully coated.
- Gently fry the chilies until golden brown and crispy, turning occasionally.
- Remove from oil and place on a paper towel to drain excess oil.

- Slit the fritters vertically.
