  • 2 Pears ripe, but firm; bosc or anjou pears recommended
  • 1 tbsp Lemon Juice freshly squeezed

Prepare the Pears

  • Peel the pears from stem to base. Immediately sprinkle with lemon juice to prevent browning. Using a melon baller, small spoon, or fruit corer, remove the core from the bottom of each pear.

Make the Syrup

  • In a saucepan, combine sugar, water, cinnamon sticks, vanilla extract, orange zest, and ginger. Cook over medium heat, stirring until the sugar dissolves. Increase heat and simmer for 5 minutes.

Poach the Pears

  • Gently add the pears to the simmering syrup, holding them by the stem. Cover the saucepan with aluminum foil and then a lid. Poach for 15-20 minutes, or until the pears are tender, turning occasionally for even cooking.

Thicken the Syrup

  • Remove the pears and let cool slightly. Continue to simmer the syrup over low heat for 10-15 minutes, or until it reaches your desired thickness.
