Ingredients
For the Paneer Balls:
- 1 cup Cottage Cheese crumbled; homemade or store-bought, paneer
- 1 tbsp All-Purpose Flour maida
- 2 tbsp Milk Powder
- 1/2 tsp Baking Powder
- 1/4 tsp Salt to enhance flavors
- 2 cup Vegetable Oil for deep frying
For the Sugar Syrup:
- 2 cup Sugar
- 1 1/2 cup Water
- 1/2 tsp Cardamom Powder elaichi
Instructions
Prepare the Paneer Dough
- Combine crumbled paneer, all-purpose flour, milk powder, baking powder, and a pinch of salt in a bowl. Knead into a smooth, pliable dough. If the dough is too dry, add a teaspoon of milk at a time until it comes together.
Shape the Paneer Balls
- Divide the dough into small, equal-sized portions (about 1 inch in diameter). Roll each portion into a smooth ball.
Make the Sugar Syrup
- In a saucepan, combine sugar, water, and cardamom powder. Bring to a boil over medium heat, stirring until the sugar dissolves completely. Reduce heat to low and simmer for 5-7 minutes, or until the syrup slightly thickens.
Fry the Paneer Balls
- Heat vegetable oil in a deep kadai or pot over medium heat. Once the oil is hot (a small piece of dough should sizzle gently when added), carefully drop the paneer balls into the hot oil in batches, ensuring not to overcrowd the pan. Fry on low to medium heat until golden brown and slightly puffed, turning occasionally for even cooking. This should take about 3-4 minutes per batch.
Soak and Serve
- Remove the fried paneer balls and immediately transfer them to the prepared sugar syrup. Let them soak for at least 20-30 minutes to absorb the syrup and become soft. Serve warm or at room temperature.
