Ingredients
Petha & Cheese
- 150 gm Petha ash gourd candy, finely grated or pureed
- 150 gm Cottage Cheese fresh, paneer, mashed or pureed, well-drained paneer
Thickening & Flavor
- 2 tsp Corn Flour cornstarch
- 1 pinch Cardamom Powder freshly ground for best flavor
- A few strands Saffron optional, but adds a beautiful color and flavor
- 1 tsp Food Coloring gel food coloring is recommended for vibrant color, green
Garnish
- 30 gm Cashew Nuts finely chopped
- 30 gm Almonds finely chopped
- 2 tbsp Petha for garnish (optional), extra
Instructions
Prepare the Nuts
- Dry roast cashew nuts and almonds until golden and fragrant. Let them cool, then roughly chop.
Infuse the Milk
- In a heavy-bottomed pan, gently heat the milk over medium heat. Add the saffron strands and cardamom powder. Simmer for 10-12 minutes, or until the milk has reduced by about half. Stir occasionally to prevent sticking or burning.
Add the Sweeteners and Cheese
- Stir in the sugar and continue to cook for another 2 minutes until the sugar dissolves completely. Add the mashed paneer and cook for 2 minutes more, stirring constantly.
Incorporate the Petha and Thicken
- Add the grated petha and cook for another 2-3 minutes. In a small bowl, whisk together the cornflour with 2-3 tablespoons of cold milk to form a smooth slurry. Gradually whisk this slurry into the milk mixture, stirring constantly until the pudding thickens to your desired consistency.
Cool and Set
- Remove from the heat. Stir in the green food coloring and mix well. Pour the pudding into individual serving dishes or a larger bowl. Cover and refrigerate for at least 4 hours, or preferably overnight, to allow it to fully chill and set.
Garnish and Serve
- Before serving, garnish with the chopped nuts and extra petha pieces. Serve chilled and enjoy!
