Ingredients
For the Spice Paste
- 1 tbsp Poppy Seed
- 1 tbsp Melon Seed
- 1 medium Onion finely chopped
- 1 inch Cinnamon Stick
- 5 Cardamom green cardamom, lightly crushed
- 1 Mace or nutmeg
- 1/4 tsp Cumin
- 1/4 tsp Peppercorn lightly crushed, white
- 1 tbsp Water for blending
For the Shahi Paneer
- 250g grams Cottage Cheese cut into 1-inch cubes, indian cottage cheese
- 1/2 cup Tomato Puree
- 1 tbsp Clarified Butter
- 1 tbsp Mawa adds richness, optional
- 1/2 tsp Chili Powder adjust to taste, red
- 1/4 tsp Milk
- 1 pinch Sugar
- 1.5 tsp Salt or to taste
- 1 tbsp Heavy Cream for garnish
- 1 Coriander finely chopped, for garnish
Instructions
Prepare the Spice Paste
- Blend poppy seeds, melon seeds, onion, cinnamon, cardamom, mace, cumin seeds, white pepper, and 1 tbsp water into a smooth paste.
Sauté the Paste
- Heat ghee or oil in a pan. Add the spice paste and sauté until the oil separates from the paste, about 5-7 minutes.
Build the Gravy
- Stir in the mawa (if using) and sauté for 2-3 minutes. Gradually add milk, stirring constantly to prevent lumps. Add the tomato puree and cook until the gravy thickens slightly, about 5-7 minutes.
Add Paneer and Season
- Stir in the sugar, salt, and paneer cubes. Cook for another 2-3 minutes, until the paneer is heated through and the gravy is creamy.
Garnish and Serve
- Remove from heat. Stir in the cream and garnish with fresh coriander leaves. Serve hot with naan or rice.
