  • Blend poppy seeds, melon seeds, onion, cinnamon, cardamom, mace, cumin seeds, white pepper, and 1 tbsp water into a smooth paste.

Sauté the Paste

  • Heat ghee or oil in a pan. Add the spice paste and sauté until the oil separates from the paste, about 5-7 minutes.

Build the Gravy

  • Stir in the mawa (if using) and sauté for 2-3 minutes. Gradually add milk, stirring constantly to prevent lumps. Add the tomato puree and cook until the gravy thickens slightly, about 5-7 minutes.

Add Paneer and Season

  • Stir in the sugar, salt, and paneer cubes. Cook for another 2-3 minutes, until the paneer is heated through and the gravy is creamy.

Garnish and Serve

  • Remove from heat. Stir in the cream and garnish with fresh coriander leaves. Serve hot with naan or rice.
