Ingredients
For the Paneer
- 250 gm Cottage Cheese cut into 1-inch cubes, paneer
For the Onion-Ginger-Garlic Paste
- 2 Large Onions
- 1 Thumb-Sized Ginger
- 5 clove Garlic
For the Sauce
- 2 Large Tomatoes pureed
- 100 gm Cream cream, or heavy cream
- 100 ml Milk
- 1 tsp Cumin Seeds zeera
- 1 tsp Coriander Powder dhania
- 1/2 tsp Chili Powder mirch
- 1/2 tsp Turmeric Powder haldi
- 1/2 tsp Garam Masala
- 1/2 tsp Mango Powder amchur, dry
- 1.5 tsp Salt or to taste
- 2 tbsp Vegetable Oil
Instructions
Prepare the Onion-Ginger-Garlic Paste
- Finely chop the onions, ginger, and garlic. Sauté in oil until golden brown. Cool completely and then blend into a smooth paste.
Make the Shahi Paneer Sauce
- Heat oil in a pan or pot. Add cumin seeds and let them splutter. Add the onion-ginger-garlic paste and sauté for a few minutes until fragrant.
- Add the pureed tomatoes, salt, turmeric powder, coriander powder, chili powder, garam masala, and amchur powder. Cook until the oil separates from the sauce, about 10-12 minutes, stirring occasionally.
- Stir in the milk and malai (cream). Bring to a simmer and cook for another 5 minutes, allowing the sauce to thicken slightly.
Cook the Paneer
- Gently add the paneer cubes to the sauce. Simmer for 5-7 minutes, ensuring the paneer is heated through but not overcooked. Do not boil vigorously.
Serve
- Serve hot with naan, roti, or rice. Garnish with fresh coriander leaves (optional).
Recipe Notes
Expert Tips for the Perfect Shahi Paneer
- For a richer flavor, use full-fat cream instead of malai.
- Don't overcook the paneer, or it will become rubbery. Simmer gently until heated through.
- Adjust the amount of chili powder to your preferred spice level.
- For a smoother sauce, you can strain the tomato puree before adding it to the pan.
