Ingredients
For the Spiced Lentil Crust
- 1.5 cup Multi Dal Batter farmz2familiez adai
- 1 tsp Water
- 1.5 tsp Salt or as per taste
For the Toppings
- 2 Eggs large
- 3 tbsp Ghee
- 1 Onion finely chopped
- 3 Shallots finely chopped
- 1 Carrot grated
- 1 Chili finely chopped, green
- 1/2 inch Ginger finely chopped
- 4 leaves Curry Leaves chopped
- 1/2 tsp Chili Powder red
Instructions
- Finely chop the onion, shallots, green chili, and ginger. Grate the carrot and chop the curry leaves. This mise en place ensures a smooth cooking process.
- In a bowl, combine the adai batter with 1 teaspoon of water. This helps to thin the batter slightly for easier spreading.
- Add 1.5 teaspoons of salt to the batter, or adjust to your taste. Remember that the batter may already be lightly salted.
- Heat a dosa tawa or a large nonstick skillet over medium heat. A hot pan is essential for a crispy crust.
- Pour approximately 2 ladles of batter onto the hot tawa, spreading it into a thin circle. Use the back of the ladle to create an even layer.
- Drizzle a tablespoon of desi ghee over the batter. Ghee adds a rich flavor and helps with browning.
- Crack an egg directly onto the center of the lentil crust. Gently spread the egg white towards the edges using a spatula.
- Sprinkle a pinch of salt and red chili powder over the egg. Seasoning at this stage enhances the overall flavor.
- Distribute the chopped onion, shallots, grated carrot, green chili, ginger, and curry leaves evenly over the egg. These toppings add freshness and texture.
- Once the bottom of the crust is golden brown and the egg is cooked through, carefully flip the pizza. Cook for another 2-3 minutes on low flame to ensure both sides are crispy.
- Remove the Desi Egg Pizza from the tawa and repeat the steps to make the second pizza.
