A simple Navratri vrat pulao made with samak rice, potato, carrot, peas, peanuts and mild spices.The grains stay light and separate, making this an easy one-pot main meal for a fasting day.

Ingredients
For the Pulao
- 1 cup Samak Rice Also called barnyard millet; rinse gently and soak for 15 minutes
- 1/2 cup Potato Peeled and cut into small cubes
- 1/2 cup Carrot Diced small
- 1/4 cup Green Peas Fresh or frozen
- 2 tbsp Peanuts Roasted and roughly chopped
- 1/2 tsp Cumin Jeera
- 1 tbsp Coriander Leaves Finely chopped
- 1 tsp Ghee For cooking
- 1 pinch Black Pepper Freshly ground
- 1 pinch Sendha Namak Or as required
Instructions
Preparing the Samak Rice
- Rinse the samak rice gently 2–3 times until the water is mostly clear. Soak in enough water for 15 minutes, then drain thoroughly.
Cooking the Pulao
- Heat the ghee in a saucepan over medium heat. Add cumin and let it sizzle for a few seconds. Add the diced potato and carrot and sauté for 3–4 minutes.
- Add the drained samak rice and green peas. Stir gently for 1 minute so the grains are coated with the ghee and vegetables.
- Add 1 1/4 cups hot water, black pepper and sendha namak. Stir once and bring to a gentle boil.
- Reduce the heat to low, cover and cook for 8–10 minutes, or until the samak rice is tender and the liquid has been absorbed. Turn off the heat and let it rest covered for 5 minutes.
- Fluff gently with a fork. Fold in the roasted chopped peanuts and coriander leaves just before serving.

Make-Ahead Tip
Chop the vegetables and roast the peanuts ahead of time. The samak rice can also be rinsed and soaked just before cooking. For the best texture, cook the pulao fresh rather than storing it for long periods.Office Tiffin Tip
