About Rustic Half-Dust Masala Paratha Recipe

Experience the rustic charm of Half-Dust Masala Paratha, a unique Indian flatbread where the magic lies in its partially ground spice blend. This creates a delightful textural contrast and slightly uneven shape, showcasing its handcrafted beauty. The flavorful filling of mashed potatoes and a coarsely ground mix of cumin, coriander, chili, and dry mango powder delivers an authentic taste of India.
Unlike traditional parathas, this recipe embraces imperfection. The coarser masala makes shaping a little trickier, resulting in charmingly cracked edges. Don't worry about achieving perfect circles – the rustic look is part of the appeal! This hearty and delicious flatbread is perfect for breakfast or a satisfying snack.
This recipe is a celebration of simple ingredients and traditional techniques, offering a taste of home-style Indian cooking. Prepare to be captivated by its unique texture and bold, aromatic flavors!

Instructions

Prepare the Masala Filling

  • Combine mashed potatoes, roasted and coarsely ground cumin, coriander, chili powder, dry mango powder, asafoetida, salt, and 2 tbsp oil. Mix well.

Make the Dough

  • In a large bowl, combine wheat flour and gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth. Add more flour or water as needed to achieve the desired consistency.

Assemble and Cook the Parathas

  • Roll out small portions of the dough into circles. Place a spoonful of the masala filling in the center. Fold the dough over the filling to form a semi-circle. Gently flatten and roll out again, ensuring the edges are slightly thicker than the center. The dough might crack - this is characteristic of the Half-Dust Paratha.

Cook the Parathas

  • Heat a griddle or tawa over medium heat. Cook each paratha on both sides, applying 2tbsp of oil to each side and pressing gently until golden brown and cooked through. Serve hot with chutney and yogurt.

Expert Tips for Perfect Half-Dust Masala Parathas

  • For a deeper flavor, dry roast the spices before grinding. This enhances their aroma and taste.
  • Don't overwork the dough; this can make the parathas tough. Knead just until smooth and pliable.
  • Adjust the amount of chili powder to your preferred spice level.
  • For extra flavor, add a pinch of garam masala to the filling.
