Ingredients
For the Masala Filling
- 250 gm Potato boiled and mashed
- 2 tsp Cumin Seeds roasted and coarsely ground
- 2 tsp Coriander Seeds roasted and coarsely ground
- 2 tsp Chili Powder roasted and coarsely ground
- 2 tsp Mango Powder amchur, dry
- 1/2 tsp Asafoetida hing, coarsely ground
- 1.5 tsp Salt or to taste
- 2 tbsp Oil for the filling
For the Dough
- 300-350 gm Whole Wheat Flour atta, add more as needed, approximately
- 1/2 cup Water add as needed to form a soft dough, approximately
- 2 tbsp Oil for cooking
Instructions
Prepare the Masala Filling
- Combine mashed potatoes, roasted and coarsely ground cumin, coriander, chili powder, dry mango powder, asafoetida, salt, and 2 tbsp oil. Mix well.
Make the Dough
- In a large bowl, combine wheat flour and gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth. Add more flour or water as needed to achieve the desired consistency.
Assemble and Cook the Parathas
- Roll out small portions of the dough into circles. Place a spoonful of the masala filling in the center. Fold the dough over the filling to form a semi-circle. Gently flatten and roll out again, ensuring the edges are slightly thicker than the center. The dough might crack - this is characteristic of the Half-Dust Paratha.
Cook the Parathas
- Heat a griddle or tawa over medium heat. Cook each paratha on both sides, applying 2tbsp of oil to each side and pressing gently until golden brown and cooked through. Serve hot with chutney and yogurt.
