Prepare the Filling

  • Heat 1/4 cup water in a pan. Add the desiccated coconut and crumbled paneer. Cook for 2-3 minutes, stirring constantly.
  • Add milk powder, 1 tbsp cashew powder, 1 1/2 tbsp oat flour, and 1 tbsp sugar. Mix well until a soft dough forms.
  • Remove from heat and stir in the melted white chocolate. Set aside to cool.

Make the Cashew Dough

  • In a separate pan, combine 50g water and 75g sugar. Bring to a boil over medium heat, stirring until the sugar dissolves completely. Continue to boil until a two-thread consistency is reached (a small amount of syrup should form a soft thread when lifted with a spoon).
  • Remove from heat. Add the saffron (including the saffron soaking water), food coloring, and rose essence. Mix well.
  • Add the ground cashews and oat flour. Stir vigorously until a smooth, pliable dough forms. Add a tiny bit more water if needed to get a proper consistency.

Assemble and Shape the Sweets

  • Lightly grease your hands and a rolling pin with ghee or oil. Place the cashew dough between two sheets of parchment paper or wax paper. Roll out to your desired thickness (about 1/8 inch).
  • Use a cookie cutter or knife to cut out circles. Alternatively, you can make your desired shape, such as squares or diamonds.
  • While the cashew circles are still warm, gently shape each into a half-moon. Spoon a generous amount of the cooled filling into the center of each half-moon.
  • Gently fold the dough over the filling, sealing the edges to create a half-moon shape.

Garnish and Serve

  • Garnish with silver leaf and fresh strawberries, if desired. Serve immediately or store in an airtight container in the refrigerator for up to 3 days. These sweets are delicious served with thickened milk (rabri).
