Ingredients
Vegetables
- 2 medium Bitter Gourd sliced
- 1 medium Eggplant also known as brinjal; sliced lengthwise into 5 pieces
- 1 large bunch bunch Mejenga Leaves or other locally available greens; roughly chopped; and colocasia leaves/stems
Instructions
Prepare the Aromatics
- Coarsely grind the green chilies, ginger, and garlic using a mortar and pestle.
Combine Ingredients
- Chop all the vegetables. Add the chopped vegetables, ground aromatics, dry fish, fermented bamboo shoots (or juice), and salt to a large pot.
Cook the Rosep Aon
- Mix all ingredients thoroughly. Add enough water to fully cover the vegetables. Bring to a simmer over medium heat, then cover and cook without stirring.
Dry Cooking Process
- Continue cooking until all the water evaporates and the vegetables are dry. Adjust salt as needed before the water evaporates completely. Do not stir the mixture during cooking.
Cooling and Serving
- Remove from heat and let the Rosep Aon cool completely with the lid on. This dish tastes best when served completely cooled and improves in flavor overnight.
