Ingredients
 

Vegetables

  • 3 Potatoes medium size, peeled and cut into fourths
  • 8-10 Chilies big ones, green, or adjust to your spice preference
  • 2 Tomatoes medium, roughly chopped
  • 1 cup Eggplant also known as brinjal, cut into wedges
  • 1 cup Flat Beans green, trimmed

Protein & Seasoning

  • 2 ounce Fish dried, or omit for vegetarian version
  • Salt to taste

  • cups Water as needed, to create a semi-thick gravy

Instructions
 

Preparing the Base

  • Peel and cut the potatoes into fourths. In a pot, combine the potatoes, green chilies, tomatoes, and dried fish (if using).

Simmering the Ingredients

  • Add salt and enough water to cover the ingredients. Cover the pot and bring to a boil over medium heat. Cook for 5-10 minutes.

Mashing and Combining

  • Remove the potatoes, tomatoes, chilies, and fish from the pot and mash them together. Add the flat green beans and eggplant to the remaining liquid in the pot.

Finishing the Curry

  • Return the mashed mixture to the pot with the remaining vegetables. Cook uncovered until the vegetables are tender. Stir occasionally.

Adjusting Consistency and Seasoning

  • Check the seasoning and add more salt if needed. Adjust the amount of water to achieve a semi-thick gravy consistency. Serve hot with steamed rice.
