Ingredients
For the Cauliflower
- 1 medium Cauliflower cut into bite-sized florets
- 1/4 cup Rice Flour
- 1/2 cup Milk
- 1 tsp Salt
- 1/2 tsp Chili Powder or to taste, red
- 1 tbsp Vegetable Oil for glazing
For the Gravy
- 1 large Bell Peppers bell pepper, cut into large pieces
- 1 medium Onion finely chopped
- 1 cup Tomato Puree
- 1/2 tsp Cumin Seeds or ajwain (carom seeds)
- 1 tsp Ginger-Garlic Paste
- 2 tbsp Vegetable Oil for sautéing
- 1 tbsp Tomato Ketchup optional
Instructions
Prepare the Cauliflower
- In a pan, combine 1 cup of water, 1/2 cup milk, and 1 teaspoon salt. Add the cauliflower florets and cook for 5 minutes over medium heat until tender-crisp.
Make the Batter
- Strain the cauliflower, reserving the cooking liquid. Let it cool. In a bowl, whisk together the reserved liquid, ¼ cup rice flour, 1/2 teaspoon red chili powder, and 1 tablespoon oil until you have a smooth batter.
Coat and Air Fry the Cauliflower
- Toss the cauliflower florets in the batter, ensuring they are evenly coated. Air fry in a preheated air fryer at 180°C (350°F) for 5-7 minutes, or until golden brown and crispy, shaking the basket halfway through.
Prepare the Gravy
- Heat 2 tablespoons of oil in a pan. Add the cumin seeds (or ajwain) and let them splutter. Add the ginger-garlic paste and sauté for 30 seconds. Add the chopped onions and sauté until softened. Stir in the tomato puree and cook until the oil separates.
Combine and Serve
- Add the capsicum and cook for 2-3 minutes, being careful not to overcook. Stir in the tomato ketchup (if using), salt, and red chili powder to taste. Add the air-fried cauliflower and gently toss to coat in the gravy. Cook for 1 minute, then remove from heat and serve hot.
Recipe Notes
Expert Tips for the Perfect Crispy Cauliflower
- Don't overcrowd the air fryer basket. Work in batches for even cooking and maximum crispness.
- For extra flavor, marinate the cauliflower florets in a mixture of spices (turmeric, garam masala) before coating them in the batter.
- Adjust the air frying time depending on your air fryer and the size of the cauliflower florets. Keep a close eye to prevent burning.
- If you prefer a spicier gravy, add more red chili powder or a pinch of cayenne pepper.
