- 1 tsp Mango Powder amchur, dry
- 1 tsp Coriander ground
- ½ tsp Turmeric Powder
- 1 tsp Chili Powder or to taste, red
- ½ tsp Sugar
Instructions
- Heat the vegetable oil in a large wok or pot over medium heat. Add the cumin seeds, bay leaf, and dried red chilies. Sauté for a minute until fragrant.
- Add the grated ginger and chopped garlic. Sauté for another minute until softened.
- Add the pureed onions and sauté until lightly golden, about 5-7 minutes. This builds a flavor base for the gravy.
- Add the pureed tomatoes, salt, sugar, ground coriander, dry mango powder, turmeric powder, and red chili powder. Mix well and cook until the masala deepens in color and the oil starts to separate, about 8-10 minutes. This indicates the spices are cooked and the flavors have melded.
- Add the frozen green peas. Stir well to coat them in the masala. Cook for 2-3 minutes.
- Add ½ cup of water. Bring to a simmer and cook until the gravy thickens slightly, about 5-7 minutes.
- Gently stir in the milk and heavy cream. Simmer for another 5 minutes, allowing the gravy to become rich and creamy.
- Add the paneer cubes. Stir gently to avoid breaking them. Simmer for a final 2-3 minutes to heat the paneer through.
