Prepare the Fenugreek Leaves

  • Sprinkle salt on the fenugreek leaves and set aside for 15 minutes. Squeeze out excess water to remove bitterness.

Sauté the Fenugreek Leaves

  • Heat 2 tbsp oil in a pan. Sauté the fenugreek leaves over medium heat for 2-3 minutes until slightly wilted. Set aside.

Make the Spice Paste and Cook the Curry

  • Heat the remaining 1 tbsp oil in the same pan. Add the prepared spice paste and sauté for 1-2 minutes, stirring continuously. Add the boiled peas and cook for 1-2 minutes. Stir in the sautéed fenugreek leaves, sugar, salt, milk, and cream. Mix well and add approximately 2 tbsp of water.

Simmer and Serve

  • Simmer for 1-2 minutes, stirring occasionally, until the gravy thickens. Remove from heat. Your Restaurant Style Methi Matar Malai is ready to serve. Garnish with fresh cilantro (optional).
