Ingredients
For the Methi (Fenugreek) Leaves
- 2 cup Fenugreek Leaves fresh
- 1/2 tsp Salt
For the Spice Paste
- 2 Chilies green
- 2 tbsp Cashews broken
- 1 inch Ginger peeled and roughly chopped
- 2 tsp Poppy Seeds
- 2 Cinnamon Sticks small pieces
- 4 Cloves
- 2 Cardamom Pods
- 4 Peppercorns grind all paste ingredients with a little water to make a smooth paste, black, whole
For the Curry
- 1 1/2 cup Peas boiled
- 1 tbsp Sugar
- 1/2 tsp Salt or to taste
- 2 tbsp Heavy Cream
- 2 tbsp Vegetable Oil or ghee (clarified butter) for richer flavor
- 1/4 cup Milk or water
Instructions
Prepare the Fenugreek Leaves
- Sprinkle salt on the fenugreek leaves and set aside for 15 minutes. Squeeze out excess water to remove bitterness.
Sauté the Fenugreek Leaves
- Heat 2 tbsp oil in a pan. Sauté the fenugreek leaves over medium heat for 2-3 minutes until slightly wilted. Set aside.
Make the Spice Paste and Cook the Curry
- Heat the remaining 1 tbsp oil in the same pan. Add the prepared spice paste and sauté for 1-2 minutes, stirring continuously. Add the boiled peas and cook for 1-2 minutes. Stir in the sautéed fenugreek leaves, sugar, salt, milk, and cream. Mix well and add approximately 2 tbsp of water.
Simmer and Serve
- Simmer for 1-2 minutes, stirring occasionally, until the gravy thickens. Remove from heat. Your Restaurant Style Methi Matar Malai is ready to serve. Garnish with fresh cilantro (optional).
