Instructions

Prepare the Watermelon Mixture

  • Blend the cubed watermelon, salt, and sugar in a blender until smooth. Strain the mixture through a fine-mesh sieve to remove any seeds or pulp.

Combine and Chill

  • Stir in the lemon juice and fresh mint leaves. Pour the mixture into a shallow, freezer-safe dish.

Freeze and Scrape

  • Cover and freeze for 2 hours. Remove from the freezer and scrape the granita with a fork to break up the ice crystals. Return to the freezer for another 2-3 hours, scraping again halfway through.

Serve

  • To serve, spoon some crushed black grapes into serving glasses. Add scoops of the watermelon mint granita. Garnish with a sprig of fresh mint and serve immediately.

  • For a smoother granita, use a high-powered blender and strain the mixture thoroughly.
  • Adjust the sweetness according to your preference. You can use simple syrup instead of sugar for better control.
  • Experiment with other fruits! This recipe is easily adaptable. Try using strawberries, raspberries, or mangoes.
  • For a more intense mint flavor, muddle the mint leaves before adding them to the mixture.
