- 1/4 cup Caster Sugar or granulated sugar
- 1/4 tsp Cayenne Pepper
- 1 tsp Salt fine sea salt, or to taste

- 1 Shallow Baking Dish Or Tray approximately 8x8 inches or similar size
- 1 Fork
Instructions
Prepare the Strawberry Mixture
- Combine the chopped strawberries, lemon juice, castor sugar, cayenne pepper, and salt in a blender.
- Blend until completely smooth and pureed.
Freeze the Granita
- Pour the strawberry mixture into a shallow baking dish or tray.
- Cover the dish tightly with plastic wrap.
- Place the covered dish in the freezer.
Stir and Scrape
- After 1 hour, remove the dish from the freezer and stir the mixture thoroughly, breaking up any ice crystals that have formed.
- Return to the freezer.
- After another hour (2 hours total), stir again.
- After 3 hours, remove the granita from the freezer and use a fork to scrape the mixture, creating a flaky, icy texture.
- Cover and return to the freezer.
Serve
- Store the granita in the freezer until ready to serve. Just before serving, scrape it with a fork to loosen any ice crystals.
