- 1/2 cup Water
- 3 tbsp Ragi Flour also known as finger millet or red millet flour
- 1/4 cup Almonds roasted and finely ground into a powder
For the Cooler:
- 2 cup Water
- 4 tbsp Jaggery or adjust to your preferred sweetness
- 2 tsp Coconut Milk optional, for added creaminess
Instructions
Prepare the Ragi Paste
- Combine 1/2 cup water, 3 tbsp ragi flour, and 1/4 cup almond powder in a bowl. Mix thoroughly until a smooth, thick paste forms.
Cook the Cooler
- In a saucepan, bring 2 cups of water to a boil. Add 4 tbsp of grated jaggery and stir until completely dissolved.
- Reduce the heat to low. Slowly pour in the ragi-almond paste, whisking continuously to prevent lumps.
- Continue to cook for 2-3 minutes, or until the mixture thickens slightly.
- Stir in 2 tsp of coconut milk (optional) at the end.
Chill and Serve
- Remove from heat and let the cooler cool completely. For a thicker consistency, refrigerate for at least 30 minutes before serving. Serve chilled or at room temperature.
