  • Return the strained guava liquid to the pan. Simmer until it reduces by about 1/4. This concentrates the guava flavor and creates a richer syrup.

  • Add the jaggery, stirring constantly until it dissolves. Be careful to prevent sticking. Jaggery adds a unique caramel-like sweetness to the syrup.

  • Stir in the lemon juice. The lemon juice balances the sweetness and adds a refreshing tang.
  • Allow the guava syrup to cool completely. Store in an airtight container in the refrigerator until ready to use.
  • To serve, fill a glass with ice. Add 1/2 cup of guava syrup. Sweeten with honey to taste.
  • Top with chilled soda water. Stir gently and enjoy!

Recipe Notes

Good To Know

  • For an extra layer of flavor, add a pinch of roasted cumin powder or crushed black pepper to the drink before serving.
  • If you prefer a smoother texture, strain the guava mixture through a fine mesh sieve or cheesecloth before adding the other ingredients.
  • To make a festive mocktail, muddle a few fresh mint leaves in the glass before pouring the drink, and garnish with a slice of lemon or a guava wedge.
  • For a vegan version, omit the honey and increase the jaggery to taste, or substitute with agave syrup.

Expert Tips

  • Adjust the sweetness and tanginess to your liking by varying the amount of jaggery and lemon juice.
  • For a richer flavor, use ripe, fragrant guavas. If fresh guavas are unavailable, you can substitute with guava pulp or nectar.
  • This drink can be enjoyed chilled or at room temperature.

Storage Instructions

  • Store leftover guava drink in an airtight container in the refrigerator for up to 2-3 days. Give it a good stir or shake before serving as some separation may occur.
