Guava Syrup
- 1 cup Guava Extract or pureed ripe guavas
- 1/2 cup Jaggery
- 1/2 cup Lemon Juice

Instructions
- In a large pan, combine the guava extract (or pureed guavas) and 1/2 cup of water.
- Bring the mixture to a simmer over low heat. Simmering gently helps extract the maximum flavor and color from the guavas.
- Continue simmering for about 30 minutes, or until the liquid has reduced slightly. Strain the mixture through a fine-mesh cloth, reserving the liquid. The remaining pulp can be composted.
- Return the strained guava liquid to the pan. Simmer until it reduces by about 1/4. This concentrates the guava flavor and creates a richer syrup.
- Add the jaggery, stirring constantly until it dissolves. Be careful to prevent sticking. Jaggery adds a unique caramel-like sweetness to the syrup.
- Stir in the lemon juice. The lemon juice balances the sweetness and adds a refreshing tang.
- Allow the guava syrup to cool completely. Store in an airtight container in the refrigerator until ready to use.
- To serve, fill a glass with ice. Add 1/2 cup of guava syrup. Sweeten with honey to taste.
- Top with chilled soda water. Stir gently and enjoy!
