Ingredients
 

Vegetables

  • 2 Cucumbers english cucumbers recommended, medium-sized
  • 2 Tomatoes chopped, medium-sized, red and firm

Dressing & Garnish

  • 1/2 cup Peanuts roast until lightly browned then grind, roasted, unsalted; for coarse powder
  • 1 tbsp Olive Oil
  • 2 tbsp Coriander chopped (also known as cilantro), fresh
  • 1/2 - 1 tsp Salt to taste
  • 1 Lime juiced

Instructions
 

Preparation

  • Wash and thoroughly dry the cucumbers. Cut into bite-sized pieces.
  • Slice the tomatoes into small, roughly equal-sized pieces.

Roasting and Grinding Peanuts

  • Preheat oven to 350°F (175°C). Spread peanuts on a baking sheet and roast for 8-10 minutes, or until lightly browned and fragrant. Let cool completely.
  • Grind the roasted peanuts in a food processor or using a mortar and pestle until coarsely ground.

Assembling the Salad

  • In a medium bowl, combine the chopped cucumbers and tomatoes.
  • Add the ground roasted peanuts, olive oil, salt, and lime juice. Toss gently to combine.
  • Garnish with fresh coriander (cilantro) before serving.
